The Yuzu Whiskey Sour is the clearest illustration of their philosophy. It is faithful to the classic architecture—spirit, citrus, sweetener, egg white—with one addition: yuzu marmalade in place of the standard sweetener. The result does not feel like a reinvention. The egg white is shaken to a silky, cloud-like consistency, and there is not even a whisper of the eggy quality that lesser preparations leave behind.

Adjusted to lean less sweet and more aromatic, it opens with a strong, assertive impact, then mellows; by the finish it has resolved into something soft and lingering. It is one of the finest Old Fashioneds I have encountered.

The Pony Star Martini—their play on the Porn Star Martini—is a case study in how to take an already popular drink and elevate its execution. The drink arrives refreshing and pleasingly tart. What makes this version memorable is the accompaniment: a passion fruit jelly, meant to be consumed whole. One bite, and a burst of concentrated sweet-sour flavour washes across the palate, providing the same counterpoint a prosecco shot provides in the classic version, but with more impact and elegance.

Jigger & Pony is proof that mastery, uncomplicated and undecorated, is its own kind of spectacle. To a stranger walking in off the street, it looks like every other bar. To anyone paying attention to what is in the glass, it becomes apparent almost immediately why it ranks where it does.
